HEARTY ITALIAN SAUSAGE & TORTELLINI SOUP
Family and friends will devour this delicious ski lodge favorite!
1 lb sweet Italian sausage (casings removed)
1 cup chopped onion
2 cloves garlic (minced)
5 cups beef broth
½ cup water
½ cup red wine
4 large tomatoes (peeled, seeded & chopped)
1 cup carrots (thinly sliced)
½ Tablespoon fresh basil leaves
½ teaspoon dried oregano
1 can tomato sauce (8 oz)
1 ½ cups zucchini (sliced)
Fresh tortellini pasta (8 oz)
3 Tablespoons fresh parsley (chopped)
→ Warm a 5 quart dutch oven (or other oven safe dish with a lid), and brown the Italian sausage.
→ Remove the sausage and drain, reserving 1 tablespoon of the drippings.
→ Saute the onions, garlic in the drippings.
→ Then stir in the beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
→ Bring to a boil, reduce the heat, and simmer uncovered for 30 minutes.
→ Skim the fat off the soup. Stir in the zucchini and parsley.
→ Simmer covered for 30 minutes.
→ Add tortellini during the last 10 minutes.
→ Stir in the parmesan cheese on top of each serving.
