With the leaves turning and the temperatures dropping, a little comfort food is in order for this month’s feature recipe. We had a little vote at WPLC and the overwhelming majority agreed that Meatloaf is the ultimate comfort dish to bring the family together at the end of a busy school/work day. This quick and easy recipe will have the fussiest of kids tucking in, and just enough ‘naughtiness’ to persuade you to put the diet on hold for a night.
1 1/2 lbs ground beef
1 Onion (finely chopped)
2 Cloves of garlic (minced)
2 Tablespoons fresh parsley (chopped)
1 Teaspoon fresh thyme (chopped)
1 Cup dried breadcrumbs
1 Cup Milk
Salt & pepper to taste
4 Rashers of smokey bacon
2 Tablespoons brown sugar
2 Tablespoons wholegrain mustard
1/3 Cup Ketchup
Preheat oven to 350 degrees. In a large bowl, combine the beef, egg, onion, garlic, thyme, parsley, milk and bread crumbs. Season with salt and pepper to taste and either lightly press into a lightly greased 5×9 inch loaf pan, or form into a loaf and place in a lightly greased 9×13 inch baking dish. Lay the 4 rashers of smokey bacon over the top of your meatloaf. In a separate bowl, combine the brown sugar, mustard and ketchup. Mix well and brush over the meatloaf. Bake at 350 degrees for 1 hour.
