Winter Park Snowshoe Trails – Try Rendezvous

 
 

The Winter Park area is home to multiple, great cross country trails which are “off the beaten path”. If you enjoy spending time outdoors but are looking for solitude that can’t be found at any resort, look no further than the Rendezvous trails. The trails at Rendezvous are not only very accessible, but also offer a wide range of difficulty. From Hwy 40, take a right at the first stoplight in Fraser (next to Safeway) and follow the road up the hill and to the right. Turn right on Cranmer and then another right onto CR 853. Follow CR 853 to where it ends at CR 850 and take a right. Park and the trailhead will be on your left (see picture below). Once on the trail, head strait until you come to an intersection at Cross trails. For a nice easy loop, taking Cross Trails to Winter Woods. Turn left on to Idelwild Trial and then another left onto South Fork Loop. This trail will meet back up Cross Trails. Add on Ditch Tail for more miles. Click here to view a map of the area

If you are looking to get even further away, check out the experimental forest in Fraser. This beautiful trail system takes a little longer to get to, but is well worth the drive. This 23,000 acre forest has been a site for studies in alpine and subalpine environments since 1937. For a nice easy ski, park at St. Luis Campground and ski the loop which includes Creek Side and Flume trails. If you are looking for a challenge, add on Chainsaw and Zoom, but be prepared for some big climbs. Click here to view a map of this area (look for the blue box stating 1st St. Louis Campground).

Please be sure to bring a map on either of these trails, along with sun screen, a light snack and plenty of water. Maps are available at the Winter Park Chamber of Commerce, located in the heart of Winter Park. These trails are also great bike trails in the summer.

The Ditch – Fresh Burgers and Tamales

We have another new restaurant here in the Winter Park/Fraser  area.  The Ditch specializes in burgers, tamales and delicious homemade New Mexican Food. Menu extends to sandwiches, frito pies and don’t forget the homemade hatch green chili!  Red or green!

The Ditch is housed in the same roadside building that was previously home to the “Thai Place” and before that the infamous Fraser Brazier.

Open 7:30am till 8pm with extended hours on the weekend The Ditch is a great stop for homemade food that won’t kill the budget.  Currently they are serving soft drinks and will decide in the future about getting a beer and wine liquor license.

On our stop at The Ditch we had a burger, chicken burrito smothered Christmas style (red & green) and the kids had a corn dog and chicken tenders.  The food was tasty, affordable and quick.  Kids loved the corn dog and I’m sure we will be making a few more stops for that culinary delight.

Easy vacation rental recipe

Fresh Pasta with Chicken in Cilantro Pesto 

Looking for the perfect food to accommodate your outdoor winter activities and sports?  Well, pasta is the way to go and there is nothing better than fresh homemade pasta.  Don’t be scared it is simple to make fresh pasta with a little help from a food processor.  Rolling the dough takes a little effort but it is a great way to work those arm out.  The tools to make this meal are all available in your Winter Park Vacation Rental from Winter Park Lodging Company.

The recipe below calls for sautéing the chicken and it is good that way but if you are able to grill the chicken breasts you will be very pleased with the results.

This is a perfect meal for the kids and the adults after a day on the slopes of Winter Park Resort or after a day of sledding.  In a pinch you can use dried past from the store.  De Cecco Fettuccini will substitute very nicely but the fresh egg pasta is unbelievably good.

Tagliatelle with Cilantro Pesto and Chicken

ingredients:

FOR THE CILANTRO PESTO:

  • 2 cups loosely packed fresh cilantro leaves
  • 2 garlic cloves, coarsely chopped
  • 1/4 cup pine nuts, lightly toasted
  • 3 Tbs. extra-virgin olive oil
  • 1 Tbs. fresh lime juice
  • 1/2 tsp. fine sea salt
  • Freshly ground pepper, to taste
  • 1 lb. boneless, skinless, chicken breasts
  • Fine sea salt and freshly ground pepper, to taste
  • 3 Tbs. extra-virgin olive oil
  • 1 lime quarter
  • 2 Tbs. kosher salt

 

Directions:

Roll out the pasta dough and cut into tagliatelle. Let dry for 30 minutes or up to 3 hours.

To make the pesto, in a food processor, combine the cilantro, garlic, pine nuts, olive oil, lime juice, the 1/2 tsp. sea salt and a few grinds of pepper and process to a paste, stopping occasionally to scrape down the sides of the work bowl. Be careful not to overprocess; the consistency of the pesto should be thick and fluid and have a slightly grainy texture. Transfer the pesto to a large serving bowl.

Pat the chicken breasts dry with paper towels, then season on both sides with sea salt and pepper. In a large nonstick fry pan over medium-high heat, warm the olive oil until very hot but not smoking. Working in batches if needed to avoid crowding the pan, add the chicken and cook, turning once, until golden on both sides and just opaque in the center when cut into with a knife, about 2 minutes per side. Transfer to a plate, cover loosely with aluminum foil and set aside in a warm place. Just before you add the pasta to the boiling water, using a sharp chef’s knife, cut each breast in half lengthwise, then cut the halves crosswise into thin slices. Squeeze the lime quarter over the chicken and re-cover the chicken.

In a large pot over high heat, bring 5 quarts water to a rapid boil. Add the kosher salt and pasta and cover the pot. When the water returns to a boil, uncover and cook for about 5 seconds and then drain, reserving about 1/2 cup of the cooking water. Blend a few tablespoons of the cooking water into the pesto to make a creamy consistency, then add the pasta to the bowl and stir and toss with the pesto until the strands are well coated with the sauce, adding a little more of the cooking water if needed to loosen the sauce. Arrange the chicken slices on top of the pasta and serve immediately. Serves 4.

Strip & Tail Winter Park, Colorado

Had a chance to get out and visit one of the new restaurants here in Winter Park. Strip & Tail opened about three weeks ago in the space once occupied by The Sushi Bar and before that was home to Lost Boys Hamburgers.

Strip & Tail remodeled the space and it turned out magnificent.  There are two large screen tv’s behind the bar and the bar has been completely redone.  The color scheme is now tasteful off white and homey wood.  In short the space is very classy with a mountain feel.

I started out with some happy hour calamari that was served with cocktail and bbq sauce. The entree was a double cut pork chop with steak fries and creamed spinach.  The entire meal was very tasty as was the bottle of Emeritus Pinot Noir.  Owner/Barkeep Steve provided great service and conversation about Timmy Tebow, the Broncos and the NFL in general.  I had a flan for dessert with a dram of tawny port… delicious.

Strip & Tail has a great happy hour with food and beverage specials. They serve a kobe/wagyu strip steak that looked fantastic that I will need to return for. The meal was one of the best I have had in Winter Park and I highly recommend Strip &Tail.

Wanting to check out the latest skis and snowboards on the market this year?  Well, there is not a better way to check out the new offering than at Winter P{ark Resort on December 3.

This years’ Ski & Snowboard Demo Fest is a one-day event featuring some of the best manufacturers in the industry, giving you a chance to try their new equipment for the 2011-2012 season. A variety of manufacturers will be on-hand to introduce guests to new products. This is a free demo located at the base of the Zephyr Mountain Express lift.

To participate, participants must be 18 years or older with a valid driver’s license, or under 18 with parental consent. Registration is from 8:30 a.m.-1:30 p.m., and all participants must register in order to demo equipment. For more details contact Winter Park Resort Guest Services at 970-726-1564.

Demos can be taken out in 1-hour increments only, and 2:30 p.m. is the cut-off for the last demo.

Companies participating include Fortitude, Head, Icelantic, K2 Skis, Liberty Skis, Ramp Sports, Salomon, Vertical Skis, Flow, K2 Snowboards and Never Summer.
